Simple Ribs

Serves: 4

Time: 2.5 hours

Ingredients

  • A rack of pork ribs, probably about 1.5kg / 2kg
  • A spice rub
  • A good BBQ sauce
  • Liquid smoke if you’ve got it

For the Rub

  • 4 tablespoons brown sugar
  • 4 tablespoons white sugar
  • 4 tablespoons garlic salt
  • 2 tablespoons chili powder
  • 1 tablespoon salt
  • 1 tablespoon smoked paprika
  • 1 tablespoon freshly ground black pepper
  • 1 tablespoon cayenne pepper

Method

  1. Remove the membrane from the back of the ribs if the butcher hasn’t already.
  2. Cover both sides of the ribs with the spice rub.
  3. Place the ribs under the grill for 5 minutes meat side up to get the fat starting to melt.
  4. Put the ribs in a roasting tray in the oven for 1 hour at 150°C.
  5. Cover with foil and return to the oven for another 30 minutes.
  6. Brush with the BBQ sauce & liquid smoke on both sides.
  7. Cook for another 30 minutes without foil.
  8. Cut the ribs and rest covered with foil for 10 minutes.
