Chilli con carne

Serves: 4

Time: 30 minutes

Ingredient

  • 500g lean minced beef or Quorn
  • 400g can Chopped Tomatoes
  • 400g can drained kidney beans
  • 2 carrots peeled and cubed
  • 2 tbsp tomato purée
  • Cooking / red wine
  • 125ml water
  • 300g rice

For spice use a Chilli con carne spice packet or:

  • 1 tsp hot chilli powder
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp paprika
  • 1 cube beef stock
  • ½ tsp dried marjoram

Method

  1. Fry the mince in a pan until brown.
  2. Add contents of spice, tomatoes, kidney beans, tomato purée, splash of wine and water.
  3. Bring to the boil stirring constantly.
  4. Reduce heat, cover and simmer for 20 minutes, stirring occasionally.
  5. Meanwhile cook rice.
