Ingredient
- 4 tsp Pesto
- 2 slices of brown bread
- 1/2 tsp sea salt
- 4 Salmon fillets
- Steamed Broccoli
Method
- Preheat the over to 180°C
- Turn the bread into crumbs in a food processor
- Mix the breadcrumbs, pesto and sea salt together
- Put the Salmon on a greased baking tray, skin side down.
- Put a 1/4 of the crumb mixture on top of each, pressing on lightly with fingertips.
- Bake for 15 to 20 minutes (depending on fish thickness) or until cooked to your liking. Serve with the Broccoli.
