Ingredient
- 500g lean minced beef or Quorn
- 400g can Chopped Tomatoes
- 400g can drained kidney beans
- 2 carrots peeled and cubed
- 2 tbsp tomato purée
- Cooking / red wine
- 125ml water
- 300g rice
For spice use a Chilli con carne spice packet or:
- 1 tsp hot chilli powder
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp paprika
- 1 cube beef stock
- ½ tsp dried marjoram
Method
- Fry the mince in a pan until brown.
- Add contents of spice, tomatoes, kidney beans, tomato purée, splash of wine and water.
- Bring to the boil stirring constantly.
- Reduce heat, cover and simmer for 20 minutes, stirring occasionally.
- Meanwhile cook rice.
