Ingredients
- A rack of pork ribs, probably about 1.5kg / 2kg
- A spice rub
- A good BBQ sauce
- Liquid smoke if you’ve got it
For the Rub
- 4 tablespoons brown sugar
- 4 tablespoons white sugar
- 4 tablespoons garlic salt
- 2 tablespoons chili powder
- 1 tablespoon salt
- 1 tablespoon smoked paprika
- 1 tablespoon freshly ground black pepper
- 1 tablespoon cayenne pepper
Method
- Remove the membrane from the back of the ribs if the butcher hasn’t already.
- Cover both sides of the ribs with the spice rub.
- Place the ribs under the grill for 5 minutes meat side up to get the fat starting to melt.
- Put the ribs in a roasting tray in the oven for 1 hour at 150°C.
- Cover with foil and return to the oven for another 30 minutes.
- Brush with the BBQ sauce & liquid smoke on both sides.
- Cook for another 30 minutes without foil.
- Cut the ribs and rest covered with foil for 10 minutes.
