Tip: This can be made ahead. Put the marinade and chicken in a ziplock bag and freeze straight away. Then as it defrosts, it will marinate!
Marinade Ingredients
- 1 large garlic clove, crushed
- 1 tbsp ground coriander
- 1 tbsp ground cumin
- 1 tbsp ground cardamon
- 1 tsp ground cayenne pepper (reduce to 1/2 tsp to make it not spicy)
- 2 tsp smoked paprika
- 2 tsp salt
- Black pepper
- 2 tbsp lemon juice
- 3 tbsp olive oil
Ingredients
- 4 Chicken thighs or breasts
- 4 flatbreads
- Sliced lettuce
- Peppers
- Red onion, finely sliced (optional)
- Mayonnaise
- Gherkins (optional)
Method
- Cut the chicken in half horizontally to make 2 thin steaks no thicker than 1 cm.
- Combine the marinade ingredients in a large ziplock bag. Add the chicken, seal, the massage from the outside with your hands to make sure each piece is coated. Marinate for 3 to 24 hours.
- Place chicken in the airfrier and cook for 12 minutes with the peppers.
- To make a wrap, get a piece of flatbread and smear with Mayonnaise. Top with a bit of lettuce and Chicken Shawarma. Roll up and enjoy!
